Cloves have some of the highest oil content of any spice! This gives them a strong aroma and flavor which can be sharp, burning, spicy, and can even numb the tongue! (Don't worry, it will go away after a few minutes.) Cloves' main flavor compounds don't dissolve well in water, so make sure to dissolve in fat (like butter or oil) or vinegar when cooking to get all the goodness out. One of the most sought-after spices by Europe's colonial powers (Portugal even burned all the clove trees on Ternate and the other nearby Indonesian islands to maintain their monopoly), a good clove can add just the right amount of warmth and spice to baked and caramelized foods alike.
